A 1 year rotation placement, in 3 restaurants, a busy bar area and varied Conference & Banqueting facility, a fantastic and robust overview of all key areas of the Hotel and Spa. You will also be invited to Head of Department meetings, have a senior manager mentor and excellent learning and development opportunities.
This placement opportunity is split between 4 food and beverage outlets, you will spend 3 months in each.
Camellia Restaurant and Bar
The Camellia Restaurant and the Bar work hand in hand to service a huge proportion of the food and beverage business for the Resort, you will spend 3 months working between the 2.
Bar comprises 2 key areas, bar service (hot and cold, alcoholic and non alcoholic beverages) as well as basic food from the bar menu, and afternoon tea.
Your time here will see you work in both of these key areas, developing high levels of product knowledge in the bar, and exceptional service standards through the afternoon tea experience.
The Camellia Restaurant is award winning and holds 2AA Rosettes with 90 covers over 3 dining rooms. During your time in Camellia you will understand how to prepare the restaurant for services, as well as room service functions. You will learn the sequence of service and how to serve guests to our standards. You will develop high levels of menu knowledge in both food and wine.
Conference & Banqueting
The C&B department is home to our 12 function rooms, used for a variety of events from weddings to conferences, baby showers to corporate meetings and internal meetings to full exclusive use events. You will get experience of the full range of events, including how to set up and prepare for them, as well as working them. There will be elements of food and beverage service for the banquet side of the department including plated service, snake service, champagne and canapé receptions. For the conference side of the business there will be coffee stations, break out food and buffets, setting up of audio visual equipment and so on.
The Pass
The Pass is a true concept restaurant; award winning with 3AA Rosettes and 30 covers, this restaurant sits in the heart of the kitchen where diners can immerse themselves in food, wine and unique atmosphere. Here you will learn about fine dining service as well as about distinct tasting menu’s and wine flights and pairings.
Botanica
The newest of our Food and Beverage outlets, Botanica opened in March 2019 and is found within our new Spa. This restaurant has a seriously strong identity based around the natural, botanicals and the local larder, there is concept of plant based options running through the menu for both food and drinks. Here you will learn about all these interesting and new approaches to food, as well as how all day dining works and the challenges that comes along with it.
Depending on the time of year you are working in Botanica you will also get to experience working in Watershed, our poolside food and beverage offering.
