The Role
We have a moderate-sized brigade which run 2 kitchens.
Our traditional dining room has 1 AA rosette and serves breakfast, afternoon tea and dinner. The food here is silver served and a firm favourite with our residents. Intense services for 50 – 60 guests every night.
The Quarterdeck has been recently awarded 2 AA Rosettes. Lunch can be extremely busy with cuisine best described as Bistro/Brasserie. Dinner is a finer affair with a seasonal limited a la carte restaurant where the chefs may show their talent and flair using modern methods of cuisine and presentation. A very seasonal restaurant where you earn your stripes in the summer and winter is a time for development and planning.
Apprentice chefs at The Nare Hotel will need to demonstrate their commitment to themselves. You will have the opportunity to develop in a kitchen where standards are high. We will expect a lot from you but will invest heavily in your development. If you are not already an apprentice we will put you through our training program which on completion will provide you with recognised qualifications and a real opportunity for you to grow further. You will be exposed to the latest cooking techniques as well as the more traditional side of cuisine. In addition, we have a full-time Pastry kitchen where you will learn to make bread, freshly prepared desserts for both of our kitchens. You really will cover everything you need to decide your own future.
Background
The Nare Hotel, positioned as ‘the country house hotel by the sea’, is Cornwall’s top luxury hotel. Sitting in its own grounds, overlooking a beach with perfect sea views, the hotel offers traditional standards of comfort, luxury and service that are increasingly difficult to find in the modern world. Rated by the AA as the best hotel in Cornwall every year for the last 15 years, it is set in some 8 acres,has 37 well-appointed rooms, a traditional ‘Dining Room’ and a fine dining restaurant. In addition, the hotel offers a broad range of leisure facilities including tennis, croquet, indoor and outdoor swimming pools, a small spa with three treatment rooms and a 38’ motor launch which takes guests on excursions.
The Nare is now about to enter a phase of significant growth with the development of further accommodation in the form of 4 two-bedroom cottages, two larger four-bedroom houses and two additional wings to the hotel which will provide six extremely spacious suites. This will coincide with our ambitions of leading the County into the 5-star market.
Candidate Criteria
This is a very high-quality operation and accordingly, candidates must have a significant aspiration to working in quality hotels. Whilst at one level this is a traditional business, it is also progressive, and candidates should be able to demonstrate a much more contemporary outlook on life and an ability to adapt to a fast-moving, busy operation.
