The role
The Nare hotel is in Veryan, Truro, TR25PF Please consider this location prior to application.
We are looking for a seasoned individual to manage and lead our Dining Room restaurant.
The dining room is our guest’s preferred restaurant. We offer breakfast, afternoon tea and dinner to all guest in residence. Covers of up to 75 guests per service, every day.
Dinner time is a traditional affair offering Silver and Gueridon service each evening. You will need to be proficient in all of the service styles we offer.
We are looking for an experienced individual (First time in over a decade) who is passionate about service and team development. Whilst this is a guest-facing role there are also the administration requirements of leading such a department.
The team is well structured, and you will be supported by strong Maître D, assistants and a well-established team with Sommelier. All looking to develop the restaurant further. You will not be replacing an exsiting Restaurant Manager, this is a new role in preperation for increased capacity.
This role will unlikely be suited to those working in cooperate settings or cookie-cutter restaurants, however, all candidates will be considered, and you should send in a cover letter with your application.
We need a personality who is confident in being the face of the restaurant and has the organsitaion to deliver the best service to our guests and develop our team with structured and continuous training.
You will be working a good 48-hour week split over 5 days with shift patterns to meet the needs of the business. We are also open over Christmas and the New Year.
In addition to working with a great team, our guests also need a mention. Our guests tend to be a delight, well mannered and respectful. You will see many of them multiple times throughout the year and will develop genuine relationships with them. They are usually well travelled and have the highest expectations and know what to expect when visiting the Nare. I mention this as for some this can be overwhelming. You will have absolute accountability for the service your team delivers, and whilst this is a new and additional role to the business, the bar is already set.
Background
The Nare Hotel, positioned as ‘the country house hotel by the sea’, is Cornwall’s top luxury hotel and only 5-star Country House Hotel. Sitting in its own grounds, overlooking a beach with perfect sea views, the hotel offers traditional standards of comfort, luxury and service that are increasingly difficult to find in the modern world. Rated by the AA as the best hotel in Cornwall every year for the last 15 years, it is set in some 8 acres, has 37 well-appointed rooms, a traditional ‘Dining Room’ and a fine dining restaurant. In addition, the hotel offers a broad range of leisure facilities including tennis, croquet, indoor and outdoor swimming pools, a small spa with three treatment rooms and a 38’ motor launch which takes guests on excursions.
The Nare is now about to enter a phase of significant growth with the development of further accommodation in the form of 4 two-bedroom cottages, two larger four-bedroom houses and two additional wings to the hotel which will provide Four extremely spacious suites.
Candidate Criteria
This is a very high-quality operation and accordingly, candidates must have a significant aspiration to working in quality hotels. Whilst at one level this is a traditional business, it is also progressive, and candidates should be able to demonstrate a much more contemporary outlook on life and an ability to adapt to a fast-moving, busy operation.
You will need a solid background and access to your own transport in order for this position to be viable.
